Operating on Tinker Street steps from the village green, the Woodstock dispensary licensed to Plant Meets Public LLC does business as HERbal Woodstock and opened March 31, 2025 — four years to the day after New York legalized adult-use cannabis. Co-owners Melissa Gibson, a former Team USA snowboarder who founded the CBD shop Hemp & Humanity at the same address in 2020, and Courtney Beaupre run the shop more like an apothecary than a retail counter, organizing products by effect rather than brand and keeping a CBD and hemp-goods section alongside the adult-use menu. The buildout leans on hemp-derived materials, including shelving made of hemp wood, and the shelves favor small Hudson Valley growers — Valley Jane in Ancram, Back Home Cannabis in Hurley, Hepworth out of Milton and High Falls. Its arrival was not frictionless: the Town Supervisor pushed for a moratorium over the storefront's proximity to a church before state approval moved forward in mid-2024.
